 AeroGarden Recipe: Quick, Easy Dill-y Ground Beef Stroganoff

A well-maintained AeroGarden will produce large harvests of dill. Guess what - you can use dill for more than just dill pickles! This delicious and easy recipe could start you on a lifelong love affair with this tasty herb.

There is never a need to look at your AeroGarden with a puzzled expression, wondering what you can do with the bountiful dill harvests. This recipe is quick and easy to prepare. You can use fresh or dried dill. Either way, it is delicious.

Brown in large skillet:

• 1 lb. lean ground beef

While ground beef is browning, combine the following ingredients in a medium bowl, mixing with a fork:

• 3 envelopes low-salt beef stock powder (like Oxo/Knorr)
• 1/4 c. flour
• 1 tsp. paprika
- (2 tsp. paprika will add an extra "bite" to the flavor)
• 1 tsp. dried dill OR 1 Tbsp. fresh dill

Into the dry ingredients, slowly add the following, stirring well to prevent lumps:

• 2 c. low-fat or skim milk

Mix until well blended. Add to ground beef when it is browned and stir until the stroganoff thickens. Cook for two minutes, then remove from heat and stir in:

• 1/2 c. to 1 c. low-fat or no-fat yogurt (per your taste preference)

Serve with pasta or mashed potatoes.

Note: You can interchange dried herbs with fresh by using the 1:3 rule:

1 tsp. dried herb = 1 Tbsp. (3 tsp.) fresh.

Because dried herbs have no moisture content, they tend to be more potent. An exception to this rule would be bottles of herbs that have been sitting on a hot kitchen shelf for long periods of time.

When in doubt, err by using too little. You can always add more later. You can also combine fresh herbs with dried (using the above formula) if you do not have enough of either.
